Sesame Rice Cookies
Wheat Free Recipe
Excellent flavor, similar to peanut butter cookies. A good choice for anyone with peanut allergies, as tahini is just like peanut butter, only made with sesame seeds instead of peanuts.
1 cup sesame tahini
1/2 cup honey
1 teaspoon vanilla
1/2 teaspoon almond extract
1 cup brown rice flour
1/2 cup chopped sunflower seeds OR ground seeds, or nuts
1 teaspoon non alum baking powder
- almond extract
Once thoroughly blended, mix in ground or chopped nuts.
Mix rice flour and baking powder. Add to sesame mixture.
Form into balls and place on lightly oiled baking sheet. Flatten slightly.
Bake Sesame Rice Cookies at 350-degrees for 15 to 20 minutes or until barely golden.
