Wheat Free Recipe
You use ground nuts of your choice as the flour in these nutty muffins. Consistency can vary but you have options for the liquid depending upon the consistency of the batter.
2-1/2 cups ground nuts
1/2 cup honey
1/2 teaspoon baking soda
1/8 teaspoon salt
**1/4 cup melted butter or 1/2 cup homemade yogurt or a small amount of fruit juice or apple sauce depending on constancy of batter
Preheat oven to 375-degrees.
After grinding nuts, leave in food processor and add remaining ingredients.
Add **liquid ingredient last depending on consistency. If the batter seems too thin, you'll want to use yogurt. If it seems just about right, butter is recommended or applesauce if you prefer to keep the fat content down, and if it is too thick, choose the fruit juice.
Spoon into greased muffin tins and bake 15 to 20 minutes.
Yield: 12 Muffins
