Soy Muffins
Wheat Free Recipe

Ingredients:
3 large eggs (or 4 small to medium)
1/2 cup oil
3/4 cup honey
1 cup water
2 cup soy flour
2 teaspoons baking soda
1/2 teaspoon cream of tartar or 1 to 1-1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
Blueberries, to taste

Directions:
Mix liquid and dry ingredients (except blueberries) in separate bowls. Add liquid mixture to dry and combine with a few swift strokes. Fold in blueberries.

Fill muffin cups and bake at 375-degrees for 20 minutes.

Variation
Fill muffin cups 2/3 full, place a few blueberries or a teaspoon of your favorite jam in the center, then cover with batter to fill cups.
