Make these extra special! Place a few blueberries or a teaspoon of your favorite jam in the center, then cover with batter to fill cups.
Mix liquid and dry ingredients (except blueberries) in separate bowls. Add liquid mixture to dry and combine with a few swift strokes. Fold in blueberries.
Fill muffin cups and bake Soy Muffins at 375-degrees for 20 minutes.
