Granny Smith Buckwheat Muffins

Granny Smith Buckwheat Muffins are a good way to use up Granny Smith apples!
2 Granny Smith apples, peeled and diced
1 cup honey
1 large egg, beaten lightly
1/2 cup oil
1 teaspoon vanilla extract
1 cup buck wheat flour, light or whole
1 cup spelt flour
2 teaspoons cinnamon
2 teaspoons aluminum free baking powder
1 teaspoon salt
1 cup raisins
1 cup walnuts, coarsely chopped
Toss together apples and sugar in large bowl.
Whisk or beat together egg, oil and vanilla.
Combine buckwheat flour, spelt or whole wheat flour, baking soda, cinnamon and salt. Stir egg mixture into apple mixture. Add flour mixture and stir just enough to combine (batter will be stiff).
Stir in raisins and walnuts. Divide batter among 16 to 18 well greased muffin cups.
Bake in middle of 325 degree oven for 20 minutes or until done. Serve warm or cold.
Yield: 18 muffins.
