Amaranth Brown Rice Flour Bread

Wheat Free Recipe

Amaranth and brown rice flour with sea salt, soy milk or water, honey, vegetable oil and egg whites mix up a tender bread.

Ingredients

1 cup amaranth flour
1-1/2 cup brown rice flour
1 tablespoon aluminum free baking powder
1 tablespoon sea salt
1 cup soy milk or water
3 tablespoons honey
2 tablespoons unrefined vegetable oil
2 beaten egg whites

Recipe Directions

Mix dry and liquid ingredients separately; beat egg whites, then combine all ingredients.

Pour batter into well-oiled 8 x 4-inch pan and bake at 350 degrees about 45 minutes.

Cool Amaranth Baking Powder Bread 10 minutes before removing loaf to rack.

Recipe makes 16 pancakes, 4-inches in diameter each.
