Mexican Cheese Bread

Wheat Free Recipe

Mexican Cheese Bread includes rice flour, baking powder, salt and xanthan gum with honey, bananas, walnuts and eggs. Fry in vegetable oil.


1-1/2 cup brown rice flour
1/2 cup soy flour
1 tablespoon non-aluminum baking powder
1/2 teaspoon salt
1 cup enchilada sauce
1 cup warm water
2 tablespoons unrefined extra virgin olive oil
1 cup grated cheese of choice

Recipe Directions

Mix the dry ingredients. Set aside.

Mix the liquid ingredients. Combine the two mixtures. Stir quickly.

Pour into a well-oiled 8 x 8-inch cake pan.

Bake Mexican Cheese Bread at 375-degrees for 25 to 35 minutes or until done.

Recipe Note

May use salsa instead of enchilada sauce.
