Mexican Cheese Bread

This bread is a nice accompaniment to soup, but does not stand on its own.

Recipe Ingredients

1-1/2 cup brown rice flour
1/2 cup soy flour
1 tablespoon non alum baking powder
1/2 teaspoon salt
1 cup enchilada sauce
1 cup warm water
2 tablespoons unrefined olive oil
1 cup grated cheese of choice

Recipe Directions

Breads Mix the dry ingredients. Set aside.

Mix the liquid ingredients. Combine the two mixtures. Stir quickly.

Pour into a well-oiled 8 x 8-inch cake pan.

Bake Mexican Cheese Bread at 375-degrees for 25 to 35 minutes or until done.

Note: May use salsa instead of enchilada sauce.

Yield: 8 servings or 1 loaf.
