Spelt Molasses Bread
Wheat Free Recipe

Ingredients:
1-1/8 cup soymilk
1-1/2 tablespoons canola oil
3 tablespoons molasses
1 teaspoon salt
3 cups spelt flour
2 teaspoon xanthan gum
3 teaspoon yeast

Directions:
Place ingredients into bread machine in the order specified for your model. Set machine on dough setting.

Remove dough from machine and place on a lightly floured board. Knead a few times and shape to fit in an 8 x 4-inch pan.

Lightly grease the pan and place loaf in it. Set aside to rise until nearly double, about 45 minutes.

Bake at 375 degrees for 40 to 45 minutes. Check after first 15 minutes of baking. If top is getting too brown, cover with tin foil for the remainder of the baking. When done, remove loaf from pan and allow to cool before wrapping.

Yield: 1 loaf
