Spelt Crackers

Spelt flour mixed with salt, baking soda, vitmain C crystals, oil and water bake up into crispy tender wheat free crackers.

Recipe Ingredients

2 cups spelt flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon unbuffered vitamin C crystals
1/4 cup oil
1/2 cup water

Recipe Directions

crackers Mix together the flour, salt, baking soda and vitamin C crystals. Add the oil and stir until it is thoroughly mixed in to form small crumbs.

Add water 2 tablespoons at a time, mixing well after each addition.

Knead dough on a lightly floured board 1 - 2 minutes. Divide dough in half and roll each half out on an oiled baking sheet with an oiled rolling pin to about a 10 x 14 inch rectangle. The dough should be very thin - about 1/16 to 1/8 inch thick.

Cut dough into 2-inch squares and prick each three times with a fork. Sprinkle with additional salt if desired. Bake Spelt Crackers at 350 degrees for 10 - 14 minutes or until golden brown and crisp.

Hint: At the end of 10 minutes remove baking sheet from oven and lift the irregularly shaped crackers around the outer edge to a wire rack. Separate remaining crackers and return them to the oven for another 3 to 4 minutes to crisp.

Recipe makes6 to 7 dozen crackers.
