Quick Quiche
Wheat Free Recipe

Ingredients:
1 cup broccoli, carrots or asparagus or left-over vegetables
1-1/2 cup Cheddar cheese
1/4 cup onion
3 slices ham, corned beef or left-over meat *
2 cups 2-percent milk
4 eggs
1/2 cup potato or rice flour
1 teaspoons baking powder
1/2 teaspoon salt
Pinch pepper

Directions:
Combine vegetables, cheese, onion and meat in food processor and grind.

Place mixture in bottom of a large pie plate.

Combine milk, eggs, flour, salt, pepper and baking powder. Blend for 1 minute.

Pour over vegetables.

Bake at 325 degrees for 45 minutes. Let stand 5 minutes and serve.

NOTE: Vegetarians can substitute extra vegetables in place of the meat.
