Wheat Free Recipe
Packed with healthful ingredients such as broccoli, carrots and asparagus plus this is quick to pull together.
1 cup broccoli, carrots or asparagus or left-over vegetables
1-1/2 cup Cheddar cheese
1/4 cup onions
3 slices ham, corned beef or left-over meat *
2 cups 2-percent milk
1/2 cup potato or rice flour
1 teaspoon baking powder
1/2 teaspoon salt
Pinch black pepper
Combine vegetables, cheese, onion and meat in food processor and grind.
Place mixture in bottom of a large pie plate.
Combine milk, eggs, flour, salt, pepper and baking powder. Blend for 1 minute.
Pour over vegetables.
Bake at 325 degrees for 45 minutes. Let quiche stand 5 minutes and serve.
* Vegetarians can substitute extra vegetables in place of the meat.
