Sesame-Rice Cookies
Excellent flavor, similar to peanut butter cookies. A good choice for anyone with peanut allergies.
Ingredients:
1 cup sesame tahini
1/2 cup honey
1 teaspoon vanilla
1/2 teaspoon almond extract
1 cup brown rice flour
1/2 cup chopped sunflower seeds OR ground seeds, or nuts
1 teaspoon non-alum baking powder
Directions:
Cream tahini, honey, vanilla, and almond extract together, then mix in ground or chopped nuts.
Mix rice flour and baking powder. Add to sesame mixture.
Form into balls and place on lightly oiled baking sheet.
Flatten slightly.
Bake at 350-degrees for 15-20 minutes or until barely golden.
Yield: 2 Cakes
