Blend together walnuts, garlic, onion, celery and parsley, add breadcrumbs and eggs, finish blending and roll your nuggest into balls and bake.
1 cup walnuts
1 clove garlic, minced
1 onion, chopped
1 tablespoon celery, chopped
2 tablespoons parsley, chopped
1/3 cup seasoned bread crumbs
2 eggs, beaten
2 teaspoons vegetable oil
Preheat oven to 375 degrees. Combine first 5 ingredients in a food processor or blender and chop finely.
Add remaining ingredients and salt and pepper to taste. Process until smooth.
Roll mixture into balls 2 inches in diameter. Arrange on a baking sheet and bake 10 to 12 minutes, or until deep brown.
Due to the nature of this recipe, it adjusts the number of servings in multiples of 4 only.
