Healthy Vegan Waffles

Healthy Vegan Waffles with ripe bananas, oatmeal, whole wheat flour, spices of cinnamon and nutmeg and optional vanilla to taste.
Mix banana and water.
Add dry ingredients and mix leaving lumps in batter (lumps keep the waffles from becoming too rubbery when cooked). Cook in waffle iron per iron's instructions.
You can use the same batter to make pancakes.
You can also substitute soy milk for the water as this gives the waffles a richer flavor and if you wish, you could leave out the spices if they do not appeal to you.

quinoa should be well rinsed in a fine strainer for 1 to 2 minutes to remove the saponens, a natural, protective coating which will give a bitter flavor if not rinsed off.
