Healthy vegan waffles with ripe bananas, oatmeal, whole wheat flour, spices of cinnamon and nutmeg and optional vanilla to taste.
1 ripe banana, mashed
2 cups water
1/2 cup uncooked oatmeal
1-1/2 cups whole wheat flour
2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon nutmeg
Vanilla to taste (optional)
Mix banana and water.
Add dry ingredients and mix leaving lumps in batter (lumps keep the waffles from becoming too rubbery when cooked).
Cook in waffle iron per iron's instructions.
You can use the same batter to make pancakes.
You can also substitute soy milk for the water as this gives the waffles a richer flavor.
If you wish, you could leave out the spices if they do not appeal to you.
