Vegan Guacamole with Tofu
1/3 pound tofu
1/4 cup or less chopped onions
1/4 teaspoon garlic salt or two fresh garlic cloves
Lime juice (about 1 half lime)
1 tomato, chopped
Salt to taste
Peel and remove seed from avocado. Place in mixing bowl and smash with fork until it is a paste.
Add 1/3 pound of tofu to mixing bowl. Smash tofu with a fork until it is mixed with avocado. Mix it until the mixture is one color.
Add chopped onions, garlic, lime juice, salt to taste, and one chopped tomato.
Ready to place on bread with lettuce or alfalfa sprouts.
Recipe makes 3 to 4 servings.
You do not want your guacamole to turn brown on top before serving! The solution: Sprinkle a liberal amount of fresh lemon juice over it and it will stay fresh and green. The flavor of the lemon juice is a natural complement to the avocados in the guacamole.
