Delicious Tofu Stir-Fry includes ginger, garlic, carrots, snow peas, scallions and mushrooms with light soy sauce and your choice of dry sherry or vegetable stock.
1/4 pound mushrooms, chopped
2 tablespoons lite soy sauce
1/4 cup dry sherry or vegetable stock
2 tablespoons fresh ginger, minced
3 cloves garlic, minced
1 pound carrots, sliced
1 pound tofu, thinly sliced
1 teaspoon vegetable oil
1 pound snow peas, thawed if frozen
1 bunch scallions, cut into 1 inch pieces
Combine first 7 ingredients in a bowl and marinate 30 minutes. Heat oil in a heavy skillet or wok over medium high heat. Add tofu mixture and stir-fry 3 to 4 minutes. Add remaining ingredients and stir-fry 3-4 minutes or until carrots are tender.
