
Three Bean Salad

Three kinds of beans sweetened with brown sugar and the addition of more healthful vegetables gives this salad a healthful, fiber-full kick.
Recipe Ingredients
2/3 cup cider vinegar
1/4 cup salad oil
1 tablespoon dark brown sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
One 15 ounce can of chickpeas
One 15 ounce can of small white beans
One 10 ounce package frozen lima beans
2 medium carrots, thinly sliced (1 cup)
2 small fresh jalapeno or serrano chile peppers, seeded and finely chopped*
1/3 cup snipped fresh cilantro
Lime wedges & fresh cilantro sprigs (optional)
Recipe Directions
Rinse and drain garbanzo (chickpeas) beans and white beans. Make sure frozen lima beans are thawed.
For dressing, in a small bowl whisk together the vinegar, oil, brown sugar, salt and pepper; set aside.
In a large plastic bag set in a deep bowl, combine the following: drained chickpeas, white beans, lima beans, carrots, chili peppers and snipped cilantro sprigs if desired.
*Note: Chili peppers contain volatile oils that can burn eyes, lips and sensitive skin. Wear plastic gloves while working with pepper and wash your hands thoroughly after ward.
Recipe makes 8 servings.
