Interesting note on Cajun Cooking:
Because of the simple, no frills kitchen of the traditional Cajun, "one pot meals" were practical and common. It is amazing how much versatility there is in Cajun cooking, when one considers the limitations the chef had in regards to ingredients and utensils. Because of the frugal nature needed to survive in the Bayou country, nothing was ever wasted by Cajuns, including all portions of butchered meats, and stocks and vegetables.
