
Cajun-Style Rice Salad

Because of the simple, no frills kitchen of the traditional Cajun one pot meals were practical and common.
Recipe Ingredients
4 cups cooked rice
2 green bell peppers, chopped
2 stalks celery
16 oz can cooked red kidney beans
4 tablespoons parsley
1/2 cup salad oil
1/2 cup vinegar
1/2 cup water
4 teaspoons paprika
4 teaspoons prepared horse radish
1 teaspoon of onion salt
1/4 teaspoon of ground red pepper
Recipe Directions
In a large mixing bowl, stir together rice, pepper, celery, beans and parsley. Set aside. Combine salad oil, vinegar, water, paprika, horse radish, onion salt and red pepper. Toss together to coat.

when one considers the limitations the chef had in regards to ingredients
and utensils. Because of the frugal nature needed to survive in the Bayou
country, nothing was ever wasted by Cajuns, including all portions of butchered
meats, and stocks and vegetables.
