Cajun Style Rice Salad

Because of the simple, no frills kitchen of the traditional Cajun one pot meals like Cajun Style Rice Salad were practical and common.

Red Beans in Cajun Style Rice Salad

Ingredients

4 cups cooked rice
2 green bell peppers, chopped
2 stalks celery
16 oz can cooked red kidney beans
4 tablespoons parsley
1/2 cup salad oil
1/2 cup vinegar
1/2 cup water
4 teaspoons paprika
4 teaspoons prepared horse radish
1 teaspoon of onion salt
1/4 teaspoon of ground red pepper

Recipe Directions

In a large mixing bowl, stir together rice, pepper, celery, beans and parsley. Set aside. Combine salad oil, vinegar, water, paprika, horse radish, onion salt and red pepper. Toss together to coat.

Prepare Cajun-Style Rice Salad a day in advance for best flavor.
