
Tofu Chocolate Pudding-Pie Filling

If your budget allows, use a really good vegan chocolate bar like Rapunzel Organic Bittersweet instead of some or all of the chips.
Recipe Ingredients
10 ounces semisweet chocolate chips (Vegan: barley-malt-sweetened nondairy chips)
2 10.5 ounce packages of Mori Nu silken or silken firm tofu
3 tablespoons maple syrup (or other liquid sweetener; or less, to taste)

Recipe Directions
Melt chocolate chips in a double boiler over low heat. Put tofu, sweetener, and melted chocolate into a blender. Process until very smooth. Pour into a serving bowl or bowls and refrigerate, covered, for at least a couple of hours. Cover well.
Bonus: Strawberry Banana Shake
Here is another sweet, creamy treat made with tofu.
Ingredients:
10-1/2-ounce package of tofu, drained
Two medium ripe bananas
Two cups of strawberries
Directions:
In a blender or food processor, combine all ingredients until smooth. Chill and serve.
