Vegan Guacamole with TofuThe tofu gives the guacamole a creamier taste, more than doubles the amount of guacamole made, and adds 16gms protein.Ingredients: 1/3 pound tofu 1 avocado 1/4 cup or less chopped onions (or green onions with greens) 1/4 teaspoon garlic salt or two fresh garlic cloves Lime juice (about 1 half lime) 1 tomato, chopped Salt to taste Directions: Peel and remove seed from avocado. Place in mixing bowl and smash with fork until it is a paste. Add 1/3 lb of tofu to mixing bowl. Smash tofu with a fork until it is mixed with avocado. Mix it until the mixture is one color. Add chopped onions, garlic, lime juice, salt to taste, and one chopped tomato. Ready to place on bread with lettuce or alfalfa sprouts. Makes 3 to 4 sandwiches.
