Tofu Chocolate Pudding-Pie Filling
Ingredients:
10 ounces semisweet chocolate chips (Vegan: barley-malt-sweetened nondairy chips)
2 10.5-ounce packages of Mori Nu silken or silken firm tofu
3 tablespoons maple syrup (or other liquid sweetener; or less, to taste)
Directions:
Melt chocolate chips in a double boiler over low heat.
Put tofu, sweetener, and melted chocolate into a blender and process until very smooth.
Pour into a serving bowl or bowls and refrigerate, covered, for at least a couple of hours. Cover well.
Note: If your budget allows, use a really good vegan chocolate bar
(like Rapunzel Organic Bittersweet) instead of some or all of the
chips.
