Cranberry-Apple Muffins

Dry Ingredients:
1 cup whole-wheat pastry flour
3/4 cup whole-wheat flour
3/4 cup unbleached white flour
1/4 cup Sucanat or brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspooncinnamon
1/4 teaspoon sea salt

Wet Ingredients:
1-1/4 cups nonfat buttermilk
1/2 cup apple juice
1/2 cup honey
2 large egg whites
2 teaspoon grated orange peel
1 teaspoon rum extract

Extras:
1 medium apple, peeled and chopped (do not grate)
3/4 cup dried cranberries

Directions:
Preheat oven to 400 degrees. Prepare 12-cup muffin tin.

Sift dry ingredients into large bowl. Add extras and toss to coat.

Whisk, blend or process wet ingredients. Pour wet into dry. Stir just until combined - don't overstir.

Distribute into tin, filling each cup nearly to the top. Bake 20 minutes, cool 10 minutes, remove from tin.

Makes 12.
