Grilled Eggplant
Ingredients:
Two to three long Asian eggplants, washed and sliced diagonally into 1/4-inch disks, coated with olive oil spray, if desired
Salt to taste (optional)
Directions:
In grill pan over high heat, place the eggplant slices and cook until dark grill marks form, about one minute on each side.
Remove, divide slices evenly amoung four plates.
Season lightly with salt if desired.
Recipe makes four servings.
