Cranberry-Apple Muffins

Vegetarian Recipe

Tender whole wheat muffins sweetened with Sucanat or brown sugar. Apples and cranberries give these a tasty fruit filled flavor.

Ingredients

Dry Ingredients:
1 cup whole wheat pastry flour
3/4 cup whole wheat flour
3/4 cup unbleached white flour
1/4 cup Sucanat or brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon sea salt

Wet Ingredients:
1-1/4 cups nonfat buttermilk
1/2 cup apple juice
1/2 cup honey
2 large egg whites
2 teaspoons grated orange peel
1 teaspoon rum extract

Extras:
1 medium apple, peeled and chopped (do not grate)
3/4 cup dried cranberries

Recipe Directions

Muffin

Preheat oven to 400 degrees. Prepare 12-cup muffin tin. Sift dry ingredients into large bowl. Add extras and toss to coat. Whisk, blend or process wet ingredients. Pour wet into dry. Stir just until combined -- don't overstir. Distribute into tin, filling each cup nearly to the top. Bake 20 minutes, cool 10 minutes, remove from tin.
