Make these tender, whole wheat Friends of the Earth Muffins with or without the walnuts. Sweet bananas nicely spiced with cinnamon and mace. Honey sweetens.



1 cup ripe mashed bananas
1 cup fat-free soy milk
1/2 cup honey
1/4 cup unsweetened apple juice concentrate
1 tablespoon blackstrap molasses
1 teaspoon vanilla extract
1 teaspoon grated lemon rind (or 1/2 teaspoon lemon extract)

1/2 cup chopped roasted walnuts (optional), 1/4 cup chopped dates, 1/4 cup chopped mixed dried fruit

Recipe Directions

Preheat the oven to 400 degrees. Line a 12-cup muffin pan with paper liners, or spray with cooking spray. Sift the dry ingredients together in a large bowl. Stir in the goodies. Whisk the wet ingredients in a separate bowl (or blend in food processor). Pour wet mixture into dry ingredients. Stir just until mixed. Spoon the batter equally into the prepared tin. Fill each cup nearly to the top. Bake 15 to 20 minutes. Cool muffins at least 10 minutes before removing from tins.
