Greek Island Salad is made with assorted salad greens, delicious deli cheese, tomatoes, cucumber, olives and your choice of Italian or Caesar dressing.
Recipe Ingredients
1 package (8 to 10 ounces) assorted salad greens or six cups packed torn romaine lettuce
4 slices deli style sliced Provolone or Mozzarella cheese, cut into strips
3 plum or roma tomatoes, diced
1/2 cup sliced cucumber, slices halved if large
1/3 cup pitted ripe or kalamata olives, halved
1/2 cup Italian or Caesar salad dressing
Freshly ground black pepper (optional)
Croutons (optional)
Recipe Directions
Combine salad greens, cheese, tomatoes, cucumber and olives in a large bowl.
Add dressing; toss well.
Transfer to 4 serving plates.
Top with pepper and croutons, if desired.
Recipe makes 4 servings.
