Grilled Eggplant

Vegetarian Recipe

Asian eggplants washed and sliced diagonally, coated with olive oil, salted and grilled. Season with salt if desired.

Recipe Ingredients

2 to 3 long Asian eggplants, washed and sliced diagonally into 1/4-inch disks, coated with olive oil spray, if desired
Salt to taste (optional)

Recipe Directions

In grill pan over high heat, place the eggplant slices and cook until dark grill marks form, about one minute on each side.

Remove, divide slices evenly amoung four plates. Season lightly with salt if desired.

Recipe makes 4 servings Grilled Eggplant.
