Grilled Eggplant

Vegetarian Recipe

Grilled Eggplant with Asian eggplants washed and sliced diagonally, coated with olive oil, salted and grilled. Season with salt if desired.

Asian Eggplant for Grilled Eggplant

Ingredients

2 to 3 long Asian eggplants, washed and sliced diagonally into 1/4-inch disks, coated with olive oil spray, if desired
Salt to taste (optional)

Recipe Directions

In grill pan over high heat, place the eggplant slices and cook until dark grill marks form, about one minute on each side.

Remove, divide slices evenly amoung four plates. Season lightly with salt if desired.

Recipe Note

Although usually considered a vegetable, the eggplant is actually a fruit. It is a member of the nightshade family, making it a relative of the potato and tomato. All these vegetables are considered nutritious sources of vitamins and cancer-fighting phytochemicals. One-fifth of an eggplant contains only 25 calories, 2 grams of fiber and 1 gram of protein.
