Corn and Pepper Chowder

Vegetarian Recipe

Cook corn, peppers, onion and vegetable broth until peppers and onions are done then rough chop in a blender and you are done! Quick, easy and VERY healthful.

Ingredients

3 cups whole kernel corn (fresh or frozen)
3 cups diced yellow peppers
1/2 cup diced onion
3 cups vegetable broth

Cook all ingredients together until peppers and onions are done (about 20-30 minutes). Take soup in batches and 'rough chop' in a blender (be careful, though, as you don't want a puree).

Reheat a little (if necessary) and sprinkle with pepper to taste (the vegetable broth adds more than enough salt for most, but suit your own taste buds). Serve Corn and Pepper Chowder nice and hot with crusty bread, if desired.

Recipe Note

Yellow vegetables such as the corn and yellow peppers are filled with beta-carotene. This includes yellow fruits, as well.

There are plenty of nutritional reasons to eat corn, but now a doctor from Cherry Hill, New Jersey says raw corn can help you lose weight, too! He says it's tasty and healthy and all you need do is husk the corn and wash it. If you boil corn, you do lose most of the nutrients in the cooking water; however, you can use that nutritious cooking water as the base for soup.
