
Corn and Pepper Chowder

Cook corn, peppers, onion and vegetable broth until peppers and onions are done then rough chop in a blender and you are done! Quick, easy and VERY healthful.
Recipe Ingredients
3 cups whole kernel corn (fresh or frozen)
3 cups diced yellow peppers
1/2 cup diced onion
3 cups vegetable broth

Recipe Directions
Cook all ingredients together until peppers and onions are done (about 20-30 minutes). Take soup in batches and 'rough chop' in a blender (be careful, though, as you don't want a puree).
Reheat a little (if necessary) and sprinkle with pepper to taste (the vegetable broth adds more than enough salt for most, but suit your own taste buds). Serve Corn and Pepper Chowder nice and hot with crusty bread, if desired.
