Wheat N Soy Straw Cakes

Vegetarian Recipe

Wheat N Soy Straw Cakes use shredded wheat rounds, dipped in a mixture including vanilla, cinnamon and apple juice before being fried.

Shredded Wheat and Soy Milk


4 ounces shredded wheat rounds
1 cup organic vanilla flavored soy beverage (such as Eden Soy)
1 teaspoon vanilla
1 tablespoon soy flour
1 teaspoon cinnamon
4 tablespoons apple juice, frozen concentrate

Recipe Directions

In shallow bowl pour milk, add vanilla, flour and cinnamon, mix well. Dip wheat rounds in the milk mixture, covering both sides.

Grill on nonstick griddle that has been sprayed. Use apple juice to keep from sticking, grill until golden brown on both sides.

Sprinkle with sugar and cinnamon, top with lite pancake syrup if desired.

Optional Topping

Another great topping is a small amount of roasted soy nuts and syrup. Place soy nuts and syrup in small saute pan. Heat thoroughly. Pour over straw cakes. Serve with a grilled banana, lightly seasoned with lime juice.

Recipe Variation

For an alternative you can dip the wheat rounds in frozen apple juice only, prior to grilling and top with no fat yogurt ice cream.
