Toasty Brown Gravy

Vegetarian Recipe

Whip up this fast gravy and serve over Tofurky and/or baked or mashed potatoes.

Ingredients

1/4 cup flour
1/2 cup nutritional yeast (for example, Red Star Vegetarian Support Formula)
1/3 cup oil or melted vegan margarine
2 teaspoons soy sauce
1/2 teaspoon black pepper
Hot water as needed

Recipe Directions

Gravy

In a small frying pan, toast flour and yeast over high heat until mixture starts to brown and develops a toasty aroma (approximately 4 minutes).

Saute the mushrooms, onion, and pepper in the oil in a large frying pan over medium heat for 5 minutes.

Add the remaining ingredients and continue heating for 3 minutes, stirring until the gravy thickens. Serve warm.

Stirring vigorously, add the oil, soy sauce, and pepper to make a smooth paste. Slowly add water, stirring, until you arrive at the gravy consistency you like. Cook for 2 minutes or until thoroughly heated. Serve hot.

Troubleshooting Gravy

  • Gravy is lumpy: With a whisk, beat the gravy until smooth. If this fails, use a food processor, strainer or blender.
  • Gravy is not thick: Dissolve 1-teaspoon cornstarch (per 1-cup of gravy) with 1-teaspoon cold water or broth. Whisk into gravy and simmer one minute until thickened.
