
South of the Border Lasagna

A great meatless lasagna recipe with a wonderful South of the border zesty taste. Very unique recipe!
Recipe Ingredients
3 frozen meatless burgers, thawed
1 cup onion, chopped
2 tablespoons jalapeno peppers, chopped fine
2 tablespoons chili powder
1 14.5 ounce can, tomatoes, stewed
1 15 ounce can, fat free vegetarian chili
Salt and pepper to taste
2 cups baked tortilla chips low-fat, crushed
1-1/4 cups tofu lite firm
1 envelope fat free ranch salad dressing mix
Recipe Directions
Place chopped onion in a small microwave dish with cover, microwave on high 3 minutes.
In large bowl combine crumbled burgers, onion, jalapeno peppers, chili powder, stewed tomatoes, chili, salt and pepper. Mix well.
Place crushed chips on the bottom of a sprayed 9x9 inch baking dish. Spread burger mixture over chips.
Place tofu in a food processor and process until creamy, add dry salad dressing mix, if mixture seems a little thick add very small amount of water and spread this over the top of casserole.
Cover with foil and bake in a 350 degree oven for 35 to 45 minutes.
