Pinto Bean Sloppy Joes


1/2 tablespoon oil
1 medium size onion, chopped fine
1/2 bell pepper, chopped fine
16-oz can pinto or red kidney beans, drained and rinsed
1/4 cup wheat germ
1 cup thick tomato sauce
1 tablespoon soy sauce or tamari
1 teaspoon chili powder
1 teaspoon paprika
1/2 teaspoon dried basil
6 buns

Recipe Directions

Heat oil; saute onion and bell pepper 3 to 4 minutes.

Add remaining ingredients (except buns, of course) and bring to a simmer.

Mash beans lightly with fork or potato masher.

Simmer, loosely covered, 5 to 7 minutes or until preferred consistency, stirring occasionally.

Serve nice and hot on fresh buns.

Bonus: Quick Beany Sloppy Joes

In large skillet, combine one 15-ounce can rinsed and drained black-eyed peas, one 15-ounce rinsed and drained kidney beans, 1-1/2 cup store-bought marinara sauce, one-half cup frozen cut green beans and one-half cup chopped green bell pepper. Add 1-tablespoon Worcestershire sauce, 2 teaspoons red-wine vinegar and 1-1/2 teaspoons chili powder. Mix well. Bring to a boil on medium high heat. Reduce heat to low, partially cover and simmer 12 minutes or until peppers are tender. Spoon onto toasted whole-wheat hamburger buns. Accompany the sandwiches with frozen hash browns and a mixed green salad.
