These moist oatmeal pancakes or waffles have no added fat and taste great! You can use the batter for either pancakes or waffles.
Recipe Ingredients
2 cups rolled oats
2 cups water
1 medium banana
1 tablespoon *raw sugar or other sweetener
1/4 teaspoon sea salt
1 teaspoon vanilla extract
*Raw sugar maintains a certain level of molasses, which, in essence, makes it a somewhat brown sugar, with caramelly and coffee like flavor. C & H makes a tasty raw sugar. C & H Washed Raw Cane Sugar is made from the juice of sugar cane. Nothing is added. It does not dissolve easily but it adds an interesting flavor. We enjoy it coffee, espresso or tea. Its crunchy texture is perfect as a topping on many desserts, and provides variety when sprinkled over waffles and / or pancakes. Raw sugar has only 15 calories per teaspoon with no fat or sodium, 4g carbs and 4g sugars.
Recipe Directions
Place all ingredients in blender and blend until smooth.
Let stand a few minutes until batter is thick. If too thick, add additional water to make batter easily pourable.
Pour into heated, oil-sprayed waffle iron and cook for 10 minutes without lifting the lid, or pour into lightly greased covered frying pan and cook for a few minutes on each side until slightly brown on each side.
Serve with favorite topping.
