
Oat Bran Muffins

This recipe makes tender oat bran muffins packed with healthful fiber and energy enhancing carbohydrates not empty calories.
Recipe Ingredients
These muffins are good zapped in the microwave and served with applesauce. They freeze well, too.
2 cups oat bran
1/2 cup quick oatmeal
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon egg substitute, if desired
1 tablespoon ground flax, if desired
Recipe Directions
Mix together the first 7 ingredients.
Add:
2 tablespoons brown sugar
3/4 cup liquid - either water, skim milk, or milk substitute
2 tablespoons vegetable oil
3/4 cup applesauce, pumpkin or banana
1/4 cup raisins
A few nuts, chopped (optional)
Spoon into a muffin pan, use cupcake papers or spray with Pam. Bake at 375 degrees for 20 to 25 minutes.
