Whip up this delicious mushroom gravy and serve over your favorite burgers, loaf, baked potatoes, or cooked grains.
6-ounce package mushrooms, finely chopped (portabello or shiitake)
1 small onion, finely chopped
Pepper to taste
2 teaspoons vegetable oil
2 tablespoons nutritional yeast
1/4 cup unbleached white flour
2 teaspoons tamari or soy sauce
1-1/2 cups water
In a frying pan, cook mushrooms and onions until tender in oil.
Season with pepper, to taste.
Add the remaining ingredients and continue heating, stirring frequently, until mixture is of desired consistency.
Recipe makes about 2 cups for 4 servings
Serving size: 1/2 cup.
