Cranberry Sauce

Thanksgiving is not complete without cranberry sauce! Here are two variations to add to your vegetarian thanksgiving collection.

Skillet pan


12 ounces cranberries
1 cup white sugar
1 cup orange juice

Recipe Directions

In a medium sized saucepan over medium heat, dissolve the sugar in the orange juice.

Stir in the cranberries and cook until the cranberries start to pop (about ten minutes). Remove from heat and place sauce in a bowl. Cranberry sauce will thicken as it cools.

Recipe makes 8 to 12 servings.

Cranberry Sauce II

1 bag fresh cranberries
1 cup sugar
1 cup apricot brandy
Dash of lemon juice (optional)

Wash the cranberries and pick out the bad ones. In an oven-safe pan (9 x 13-inches) mix the cranberries, sugar, and brandy. Cook for two hours at 350 degrees. Can be served warm but are very good when chilled as well.
