Cranberry Rice Salad
This Cranberry Rice Salad recipe is super easy and makes a great snack or side dish. Add your own ingredients to make it all yours and claim it as such!
1 cup long grain white rice
1/4 cup wild rice
1/2 cup dried cranberries (see note)
1/4 cup chopped parsley
1/4 teaspoon freshly ground black pepper
2 tablespoons olive oil
1/4 cup green onions, diced<br> 1/2 teaspoon ground cloves
Salt to taste
Cook the rice to package instructions.
Fluff rice and add all other ingredients.
Always keep a lid on your rice while cooking it. If you check it too often, you release steam. The steam is what makes it cook.
Recipe makes 6 servings.
