Cranberry Rice Salad
This recipe is super easy and makes a great snack or side dish. Add your own ingredients to make it all yours and claim it as such!
1 cup long grain white rice
1/4 cup wild rice
1/2 cup dried cranberries (see note)
1/4 cup chopped parsley
1/4 teaspoon freshly ground black pepper
2 tablespoons olive oil
1/4 cup green onions, diced
1/2 teaspoon ground cloves
Salt to taste
Cook the rice to package instructions.
Fluff rice and add all other ingredients.
Always keep a lid on your rice while cooking it. If you check it too often, you release steam. The steam is what makes it cook.
For the dried cranberries, we highly recommend Traverse Bay Fruit Co. Dried Cranberries. They are sweetened with sugar and have a touch of sunflower oil added to prevent clumping. No preservatives or sulfites; kosher. You can also eat them as snack or add to granola, trail mix, baked goods, salsa, stuffing, fruit salad, ice-cream, etc.
