Bourbon Sweet Potatoes
Bourbon Sweet Potatoes have a combination of bourbon and butter with a touch of vanilla that give these a special twist for the holiday. The sweet potato deserves to be on the highest perch because it is a nutritional powerhouse!
6 large sweet potatoes, peeled
1 cup white sugar
1/2 cup butter
1/2 cup bourbon
1/2 teaspoon vanilla extract
Preheat oven to 350-degrees.
Arrange sweet potatoes in a 9 x 13-inch baking dish.
Combine sugar, butter, bourbon and vanilla extract in a large saucepan and heat to a boil. As soon as the sauce comes to a boil pour it over the sweet potatoes.
Bake 30 to 40 minutes or until the sweet potatoes are soft.

- There are two varieties of sweet potatoes: pale yellow with a dry flesh and dark orange with a moist flesh. The dark orange variety is plumper in shape and sweeter than the yellow variety.
