Baked Squash and Yams

Vegetarian Recipe

Winter squash and garnet yams with tomato sauce , soy milk and garlic chili paste make up this side dish. Varieties of winter squash include acorn, banana, buttercup, butternut, calabaza, delicate, golden nugget, hubbard, spaghetti, sweet dumpling, turban and pumpkin.

Ingredients

1 pound of winter squash, peeled and sliced
1 pound of garnet yams, peeled and sliced
1 cup tomato sauce
1 cup soy milk
1 tablespoon garlic chili paste

Recipe Directions

Squashes

Layer the squash and yams in a baking dish.

Mix the remaining ingredients together and pour over the vegetables.

Bake covered at 350-degrees for 45 minutes.

Finish baking uncovered for another 15 minutes or so.

Recipe Notes

Garlic chili paste is a Chinese sauce made primarily from red chili and garlic. Used to accent poultry, rice, and noodle dishes.
