Belgian Waffles

Directions:
In a large bowl, combine the flour, baking powder, sugar, oil, milk and egg yolks.
In a medium bowl, beat the egg whites until they stand in soft peaks. Fold the egg whites into the batter. Don't overmix!
Measure out 1/2-cup (or the amount recommended for your waffle iron). Pour the batter into a hot waffle iron. Cook for about 2 minutes. Repeat for the rest of the batter. This should make 8 waffles.
Top with your favorite fruit or jam (raspberry and strawberry are the most popular). Add whipped cream or cool whip and serve hot. See also Banana Split Waffles.
