Cornmeal Drop Biscuits

Ingredients:
1-1/3 cup all purpose flour
1/3 cup yellow cornmeal
1 tablespoon sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup plus 2-tablespoons skim milk
2 tablespoons vegetable oil
1 egg, beaten
Vegetable cooking spray

Directions:
Preheat oven to 400-degrees. Lightly spray a baking sheet with vegetable cooking spray.

Combine flour, cornmeal, sugar, baking powder and salt in a large bowl.

In a separate bowl, combine milk, oil and egg; add to dry ingredients, stirring just until dry ingredients are moistened.

Drop batter by heaping tablespoons onto a baking sheet.

Bake at 400 degrees for 12 minutes or until lightly browned.

Cool on a wire rack.

Recipe makes one-dozen biscuits.

Note: Each of these biscuits contains about 96 calories.
