Flavored Butter
Cashew ButterIngredients:1 lb. raw cashews, shelled 1 teaspoon salt 1 teaspoon sugar 2 tablespoons peanut oil, more as needed Directions: Roast the cashews and place 1/3 of them in a food processor or blender. Coarsely chop and set aside. Process the remaining nuts with the salt, sugar and peanut oil until they reach a smooth consistency. Add the coarsely chopped cashews and stir and you have a crunchy gourmet butter. Toasted Walnut ButterIngredients:6 tablespoons unsalted butter 1/2 cup toasted walnuts, chopped 1 tablespoon maple syrup 1/2 teaspoon ground cinnamon 1/2 teaspoon Kosher salt 1/2 teaspoon ground ginger Freshly ground pepper to taste Directions: Toast 1/2 cup chopped walnuts in a toaster oven, about 1-1/2 minutes. Let cool to room temperature. Place 6 tablespoons of unsalted butter in a bowl and add, 1 tablespoon maple syrup, 1/2 teaspoon ground ginger, 1/2 teaspoon ground cinnamon and 1/2 teaspoon Kosher salt and freshly ground pepper to taste and stir until well blended. Pistachio ButterIngredients:1 stick unsalted butter, softened 2 tablespoons crushed pistachios 1 teaspoon salt Directions: Mix all ingredients until well blended. Roll into a cylinder, wrap in plastic and chill for an hour or two. To serve, slice or simply serve in an attractive container. Mustard ButterIngredients:2 tablespoons melted butter 2 teaspoons prepared mustard 1 teaspoon sugar Pinch salt Directions: Mix well.
