Weekend Breakfast Burritos

Ingredients:
1 medium potato, diced
1 small onion, chopped
2 large jalapenos, seeded and chopped
1/2 cup bell pepper, chopped
1/2 pound sausage
3 eggs, lightly beaten
Fajita seasoning (any powdered mix)
6 flour tortillas
Cheddar cheese, grated
Pico de Gallo - onion and tomatoes

Directions:
Saute potatoes and sausage together in a non-stick skillet until sausage is fully cooked and potatoes are the desired doneness. Add vegetables and saute until soft.

Place tortillas in the microwave and microwave on high for ten seconds per tortilla. Alternatively, you can put them all into a large zip-lock baggie and microwave them together.

When you start the microwave with the tortillas, pour the scrambled eggs into the saute pan with all the ingredients.

Stir the mixture until the eggs are firm.

When the tortillas are steaming hot and the eggs are completely cooked, fill the tortillas and put your favorite toppings on; serve.
