Elegant Southern Pralines Tasty Temptation Recipe
Ingredients:
2 cups granulated sugar
1 cup buttermilk
1 teaspoon baking soda
Pinch of salt
2 tablespoons butter
2 cups nuts, halved or coarsely chopped
1 teaspoon vanilla

Directions:
In a large saucepan (to allow for foaming) put everything except the butter and nuts, and bring to a boil over medium-high heat. Keep stirring until a candy thermometer reaches 210-degrees. Add the butter and nuts, lower the heat a little, and keep cooking until the thermometer reaches 230-degrees. If you haven't a thermometer, test it: The syrup should form at least a 2-inch thread without breaking when you tilt the spoon. Remove from heat, add the vanilla, and let it sit until it settles. Beat until mixture loses its gloss; drop by spoonfuls on waxed paper. When cool, wrap individually in waxed paper squares.
Note: These are also known as Elegant Northern Pralines when made with walnuts instead of pecans.
