Gorgonzola Butter
Ingredients:
4 ounces Gorgonzola cheese
4 tablespoons unsalted butter
Directions:
In a food processor, combine Gorgonzola cheese and butter. Process until smooth.
Makes 4 servings
Honey Butter
Easy to make, yummy to eat! Add 1 teaspoon of grated orange peel for breakfast or brunch.
Ingredients:
1/2 cup butter, softened
1/3 cup honey
Directions:
Beat butter and honey together until creamy. Serve at room temperature.
Makes 4 servings
Lemon Butter
Serve this thick and creamy, lemon-flavored butter warm over gingerbread or blueberry muffins. You can also top ice cream with it! This recipe will also work with margarine instead of butter.
Ingredients:
1/4 cup white sugar
1 tablespoon cornstarch
1/4 teaspoon grated lemon zest
1/2 cup water
1 tablespoon lemon juice
2 teaspoons butter
Directions:
In a saucepan over medium heat, combine sugar, cornstarch, and lemon zest. Stir in water and lemon juice, and continue stirring. After the mixture thickens and bubbles, continue to heat and stir for another two minutes.
Remove the sauce from the heat and stir in the butter. Serve warm.
Makes 4 servings.
Strawberry Butter
This goes great with pancakes or french toast!
Ingredients:
1/2 cup butter, softened
2 tablespoons confectioners' sugar
1 tablespoon strawberry preserves
Directions:
In a small bowl, beat together the butter, confectioners' sugar and strawberry preserves until creamy. Cover, and refrigerate until serving.
Makes 8 servings
Sun-dried Tomato Butter
Use this flavorful butter in place of plain butter to make gravy, or place directly on top of cooked steaks.
Ingredients:
1 cup unsalted butter
4 tablespoons chopped fresh parsley
1 teaspoon minced garlic
1 ounce sun-dried tomatoes, chopped
Salt and pepper to taste
Directions:
In a mixing bowl, cream butter. Mix in parsley, garlic, and tomatoes. Chill for at least 2 hours.
Makes 16 servings
Soft Spread Butter
This is a homemade margarine or soft spread 'butter'. While it is not lower in calorie, it has a higher ratio of unsaturated to saturated fat than butter, and unlike margarine, it contains no trans fat. Create a flavored butter by adding garlic or cinnamon, or anything you chose!
Ingredients:
1 cup butter, softened
1-1/4 cups canola oil
Directions:
In a lidded, plastic storage container stir butter until it has a smooth, frosting-like consistency.
Slowly, one tablespoon at a time, stir in the first 1/2 cup of oil; mix until smooth. Stir in the remaining oil a little more quickly, mixing well.
Refrigerate for 3 hours, or until set.
Store in refrigerator. If the 'butter' melts after being left out, refrigerate to restore solidified quality.
