Fried Green Tomatoes Recipe Rumble
Ingredients:
Two medium-sized green tomatoes sliced 1/4-inch thick
1/4 cup gluten free cornmeal
1/4 cup Parmesan cheese, grated
3/4 teaspoon garlic salt
2 tablespoons gluten free baking mix
1/8 teaspoon pepper
1/2 teaspoon oregano, crushed leaves
1/4 cup olive oil
One egg, beaten

Directions:
Sprinkle tomato slices with salt and allow to drain on paper towels for 30 to 60 minutes.
Meanwhile, combine cornmeal, cheese, baking mix, garlic salt, oregano and pepper on a shallow plate. Dip each tomato slice in the beaten egg, then in cornmeal mixture.
In a medium skillet, heat oil on medium high.
Fry tomato slices for two minutes per side or until golden brown. Drain on a paper towel-covered wire rack. Serve while hot.
Note:
If you do not suffer Celiac disease, merely replace the GF baking mix with one such as Bisquick© and the cornmeal with "regular" cornmeal. Just as tasty!
