Parmesan Fillets

Ingredients:
1 pound fish fillets
1/2 cup plain nonfat yogurt
1 teaspoon Dijon mustard
1/4 cup Parmesan cheese (grated)

Directions:
Mix yogurt and mustard in a small bowl. Place fish in a sprayed nonstick baking dish. Spread top side of fish with yogurt mixture. Sprinkle with most of the parmesan, reserving some for serving. Bake uncovered at 400-degrees for 15 minutes (or until fish flakes easily with fork). Sprinkle with reserved parmesan to serve. Recipe makes four, 3-ounce servings.
