Broccoli, Tomato and Basil Frittata Recipe Rumble
Ingredients:
Egg subsutitute equal to four large eggs
3 tablespoons skim or 1-percent milk
2 tablespoons fat free Parmesan cheese, grated
Fresh ground black pepper to taste
1 tablespoon olive oil
One medium onion, diced
Three medium tomatoes, peeled, seeded and diced
1 tablespoon fresh basil, chopped or 1-teaspoon dry
1/2 cup sliced mushrooms
1/2 cup chopped broccoli or zucchini

Directions:
Preheat oven to 325-degrees.
Oil a 7 or 8-inch baking dish.
In a large bowl, combine first four ingredients.
In a nonstick pan, saute onion in oil for five minutes.
Add tomato and basil and saute for five minutes, stirring frequently.
Add broccoli and mushrooms and cook for five minutes more.
Add this mixture to eggs and pour into prepared dish.
Bake for 15 to 17 minutes until just set. Be careful not to overbake.
Recipe makes two or three servings.
