Merry Cherry Dessert Recipe Rumble
Ingredients:
1-1/2 cups boiling water
One package (8-serving size) cherry flavor gelatin
1-1/2 cups cold water
One can (21 ounces) cherry pie filling
4 cups angel food or pound cake cubes
3 cups cold milk
Two packages (4-serving size each) vanilla flavor instant pudding and pie filling
One tub (8 ounces) whipped topping, thawed, divided

Directions:
Stir boiling water into gelatin in large bowl at least two minutes until completely dissolved. Stir in cold water and cherry pie filling. Refrigerate one hour or until slightly thickened (consistency of unbeaten egg whites).
Place cake cubes in 3-quart serving bowl. Spoon gelatin mixture over cake. Refrigerate 45 minutes or until set but not firm (should stick to finger when touched and should mound).
Pour milk into large bowl. Add pudding mixes. Beat with wire whisk two minutes. Gently stir in 2-cups of the whipped topping. Spoon over gelatin mixture in bowl. Refrigerate two hours or until set. Top with remaining whipped topping. Store leftover dessert in refrigerator. Recipe makes 16 servings.
Variation: Substitute two packages (4-serving size each) cherry flavor gelatin for one package (8-serving size) gelatin.
Tips: Use sugar-free gelatin, skim or 1 percent milk and non-fat or light whipped topping to significantly reduce sugar, fat and calories. Just as tasty!
