Super Veggie Wrap Recipe Rumble
Ingredients:
One cucumber, peeled and thinly sliced
Two small zucchinis, thinly sliced
Two carrots, peeled and thinly sliced
Four large white mushrooms, chopped
Four green onions, chopped
One clove garlic, chopped (optional)
Four, 10-inch tortillas
1/2 cup cream cheese

Directions:
In a small bowl combine all vegetables.
Thinly spread 1-tablespoon cream cheese on each tortilla.
Place some of the chopped vegetable mixture evenly across center of tortilla.
Roll up tortilla, trapping ingredients tightly inside to form a tight tube. When finished rolling, slice each tube into 1-inch wide sections. Serve.
Recipe makes four servings.
Note: If watching fat, use fat free cream cheese and fat free tortillas.
