New Potatoes SaladIngredients:4 handfuls of red new potatoes 2 teaspoon of 21 year old balsamic vinegar 1 teaspoon of ground mustard seeds 8 teaspoons of olive oil 4 scallions, chopped 2 pieces of lean, well cooked bacon, chopped Salt and freshly ground pepper Directions: Boil the potatoes for about 15 minutes, until tender. Let cool. Make the dressing by whisking the vinegar, mustard, oil, salt, and pepper. Then add to the cooled potatoes along with the bacon and scallions. Toss gently.
