Sauteed Apples Supreme (Diabetic Friendly/Healthy)

Ingredients:
Two small (or one large) apples
1 teaspoon butter
1/4 cup unsweetened apple juice or cider
2 teaspoon brown sugar substitute
1/2 teaspoon ground cinnamon
1 tablespoon roasted walnuts - chopped

Directions:
Cut apples into quarters. Core each quarter and cut into 1/2-inch thick slices.

Melt butter in large nonstick skillet over medium heat.

Add apples; cook four minutes, stirring occasionally.

Combine apple juice, brown sugar substitute and cinnamon, pour over apples.

Simmer five minutes or until apples are tender and sauce thickens.

Transfer to serving plates; top with walnuts.

Recipe makes two servings.
